Sophisticated decaffeination process

Coffee is made up of around 1,000 chemical components that contribute to its taste and aroma. Removing only the caffeine without compromising the taste is a complex process.

The first commercially successful decaffeination process was invented by German merchant Ludwig Roselius and co-workers in 1903. Roselius discovered the secret to decaffeination by accident when he observed that a consignment of coffee beans accidentally soaked in seawater had lost most of their caffeine content while losing little of their flavour. The process involved steaming coffee beans with various acids or bases, then using benzene as a solvent to remove the caffeine. However, benzene is now known to be a carcinogen, so other solvents, such as dichloromethane or ethyl acetate, are now used.

There are four major processes used for decaffeination: Direct-Solvent Process, Indirect-Solvent Process, Swiss Water Process, and Carbon Dioxide (CO2) Process.

In the Direct-Solvent Process, the beans come into direct contact with chemicals to remove the caffeine. First, the beans are steamed for about half an hour to release the caffeine and open up their pores, making them more responsive to a solvent. They are then rinsed repeatedly, typically in either methylene chloride or ethyl acetate, to bind the caffeine away from the beans.

The Indirect-Solvent Process involves leaving the beans to soak in hot water. Once the water has absorbed the caffeine and other components, it is transferred to a different tank where it is treated with a solvent. The solvent consumes only the caffeine, leaving the oils and flavour molecules in the water. The solvent-containing caffeine is then skimmed off the top of the water and never comes into direct contact with the beans. The flavour-laden water is then returned to the tank with the beans, where they reabsorb the flavours and proteins.

The Swiss Water Process, pioneered in 1933 and introduced commercially in 1988, does not use any chemicals to remove caffeine. The beans are first steamed to release the caffeine and make it more accessible. They are then soaked in water that has been oversaturated with coffee compounds, and the caffeine is drawn away in the water. Water can only hold so many flavour compounds, so soaking the beans in water that has been oversaturated ensures that only the caffeine will be released into the water. The water then goes through an activated charcoal filter, which captures the larger caffeine molecules while allowing the smaller oil and flavour molecules through, resulting in decaffeination while maintaining the coffee flavour.

The most recent decaffeination process is the CO2 method, which uses carbon dioxide in place of any chemicals. The coffee beans are first soaked in water and then placed in a stainless-steel container. After the container has been sealed, liquid CO2 is forced into the coffee at 1,000 pounds of pressure per square inch to extract the caffeine. The CO2 solvent dissolves and draws only the caffeine out of the coffee, leaving behind all the flavour molecules. The caffeine-packed CO2 is then moved to another container, where the pressure is released, and the CO2 returns to a gaseous state, leaving only the caffeine. The caffeine-free carbon dioxide is then placed back into the pressurised tank to be used again.
